Bee’s Knees

The Bee’s Knees is a Prohibition-era cocktail containing gin, fresh lemon juice, and honey simple syrup. The first thing that may come to your mind is bathtub gin to hide the flavor, but nope. The drink is credited to Frank Meier, an Austrian-born bartender who was the head bartender at the Hôtel Ritz Paris during the 1920s. I have also read it is attributed to Margaret Brown, an American socialite, but either way it is a great drink worthy of mention.

The Bee’s Knees started out as my partner’s go to drink whenever we hit Lloyd Whiskey Bar in Fishtown, however the Gold Rush is slowly becoming a drink of choice when they opt for a simple whiskey cocktail. (See my article on the Gold Rush).

Ingredients:

  • 2 oz (60ml) Gin
  • .75oz (22ml) Lemon Juice
  • .75oz (22ml) Honey Simple Syrup
  • Garnish: Lemon Peel (optional)

Directions:

  1. Combine the Gin, Lemon Juice and Honey Simple Syrup into a shaker.
  2. Add ice to the shaker and give it a good shake.
  3. Strain into a rock glass filled with one large ice cube.
  4. Garnish with lemon peel if you want to spice it up
