So one my new ingredients his Cherry Heering. I always say it like herring, but that is wrong or was that a red herring! Good thing I have someone proof read my posts! My first introduction to Cherry Heering was via a Manhattan, but it also a found in the scotch based ‘Blood and Sand’, which is quite delicious as well, as in a Singapore Sling and for me it has only steam rolled on to other libations from there!
I always feel I choose ancient cordials form my cabinet recently, but they are the best. So hopping in to my time portal. It was 1818 and guess what they started to make in Denmark? Fast forward 200+ years… Surprise still the very first cherry liquor: The Original Cherry Heering… Notice the original part. I joke about ancient cordials, but this one has some regal-ness about it! Check out the bottle itself! The image at the top of the label is the Royal Arms which makes the a supplier to royalty. Purveyors to HM The Queen are entitled to use the Royal Arms as an integrated part of the firm name. So going back to the liquid itself… Not much details… Today it is still produced by the same company, which doesn’t appear to have been acquired by any large corporations. It is a recipe of lightly crushed Danish cherries, a blend of spices and spirits (not 100% clear on what it is) maturated in a cask for a minimum of three years or maybe five years. Again…. No details.. What comes is out is a ruby red color which smells like brandied cherries. It’s sweet, of course, but not ridiculously so, and there’s a lovely hint of spice at the end. I can enjoy this on the rocks as an aperitif or mixed in a delicious after-dinner drink, but either way you will not be disappointed.
