Age: NAS (7-10 years) ABV/Proof: 40% / 80 | Apple notes on the nose of the Green; Lots of tropical fruits on nose; Nice mouthfeel. Good oils in the texture; Nose – hydrangea, toffee, honey, apple; Buttery finish; Banana; Caramel on the finish; |
Whiskey: Yellow Spot Distiller: Mitchell & Son (distilled, aged and bottled for them by Midleton Distillery) Mash bill: 100% Barley (malted & unmalted) Cask: Finished in ex-Malaga Age: 12 years ABV/Proof: 46% / 92 | You can really smell the sherry cask on this; Creme Brûlée, Butterscotch; Raisin; Creamy texture with vanilla & a bit of citrus; peppery finish; Banana bread, baked apple, tropical fruit; I get sweet wine raisins at the end of the finish; |
Whiskey: Red Spot Distiller: Mitchell & Son (distilled, aged and bottled for them by Midleton Distillery) Mash bill: 100% malted and un-malted barley Cask: Finished in ex-Bourbon, ex-Sherry and ex-Marsala Age: 15 Years ABV/Proof: 46% / 92 | Malaga and Marsala are very viscous wines. They probably leave strong residue in the cast staves; Red nose – holly, cinnamon, deep baking cocoa, Dark chocolate; I had a cinnamon cake that had the same nose as the Red Spot; Brandied cherries; I get cherries and also a dried fig thing going; Strawberry on the nose |
Whiskey: Blue Spot – Cask Strength Distiller: Mitchell & Son (distilled, aged and bottled for them by Midleton Distillery) Mash bill: 100% malted and un-malted barley Cask: Finished in ex-Bourbon, ex-Sherry and ex-Portuguese Madeira Age: 7 Years ABV/Proof: 58.7% / 117.4 | Licorice on the nose; Maple and butter, like pancakes; tingle on the first taste. cinnamon; hot honey and melted caramel with cinnamon; Definite hazelnut; I got some wood but not oak like sandalwood; More nut flavors, less red/cooked fruit. More heat; Cinnamon on the front. Light pepper on the back; I love the heat upfront with hints of crème brulée mid palate; Toasted coconut followed by brown pie spices, mellow and surprisingly shorter finish; ton of flavor up front but it mellows out really quickly and nicely as it goes down; Three drops of water really opened this up!! Pineapple, caramelized banana, graham cracker; The Blue with a few drops of water now comes across as cookie butter; |
